I picked up a pound of crawfish tail meat, so made this dish. It was so good that it will be put into regular menu rotation.

mise en place:
crawfish tail meat (can substitute shrimp)
onion or scallion
dry vermouth (or white wine)
pasta (I used penne, but anything that has nooks, grooves or crannies for the sauce would do)
Slap Ya Mama Original Blend, 8-Ounce
olive oil

Cook pasta just short of al dente.

Sweat onions in pan with oil & butter. Add garlic. When fragrant, add wine. Let reduce until alcohol burns off.

Add crawfish and cream. Reduce slightly. Season with Slap Ya Mama. Taste. Adjust seasoning and/or viscosity.

Add pasta and let pasta heat through to finish cooking.
